(ABC 6 News) - COVID-19 has caused many cancellations of summer events across Minnesota, including the great Minnesota get together, but one Minnesota mom had an idea and brought it to life.
"It was kind of on a whim. I love the fair food and I thought well what better way to help those that are going to be affected by not being able to have their food booths there,” Lori Lexvold said.
After the Minnesota state fair canceled for this year, Lori went in to action. Not just so, she could get her favorite fair treat, but also to help those food vendors get some sort businesses. "I got quite excited because it showed up on my notifications. I was like oh Minnesota state fair food app, I wonder who created it, oh my mother did!," her son, Ian Lexvold said.
Her Facebook group started out just for family and friends, but quickly grew. With the help of her son, Ian, who made a map that you can easily find food all across the state. "Not realizing how it would grow and grow and grow. And then I think when we hit the 1,000 mark I was excited and then when we hit the 10,000 mark I was even more excited,” Lori said.
Many of those vendors are located in parking lots and at different businesses. One of those, Quesadilla junction, is staying parked in Stewartville for the whole summer.
"The season is pretty much gone, all the fairs and festivals have been canceling,” Owner, Oliver Regal said.
For 35 years, the food vendor has only served food at fair, but this summer they are changing things up in order to keep serving hungry customers."I don't think you can ever replace those. Because it is just a different atmosphere, but I think people are looking for something to kind of get back to normal and have some fair food again,” Regal, said.
"They need their mini donut fix, or their cheese curd fix, their pronto pup! It's just for anybody,” Lori said. Even though this is not like the great Minnesota get together, it is one way that people can once again enjoy their favorite fair treats.
