(ABC 6 NEWS) - Kids heading back-to-school in Byron Monday were greeted by the district’s newest addition, B-Town Bistro.
“Our beautiful baby, the new food truck we have here,” said Josh Bernards, business and technology teacher at Byron High School.
Late last year the district found out it would get a $45,000 Bush grant.
“The fact that a thought that was maybe crazy at the time didn’t get shot down and there’s a lot of people on board and to see kind of these baby steps we’re still a long ways away from getting everything done we need to get done,” said Ryan Radke, family and consumer sciences teacher at the high school.
In addition to serving customers, the food truck will give students the opportunity to try out entrepreneurship both behind the scenes and behind the grill.
“With the finance, with the marketing, with being able to liaison and work with different people in the community,” Bernards said.
“We’re going to be working and talking with some farmers about getting some locally grown meat, as well as we really want to do some farm-to-table type food as well,” Radke said.
Some of the produce will be grown right at the high school, in partnership with the agricultural department.
“The one that will be good is the food’s going to be good,” Radke said.
The Bistro’s menu will feature four foods: jambalaya, a pork bowl and an egg roll burger, with vegetarian and gluten-free options plus a dish the students come up with, which will rotate from quarter to quarter.
“What we just really want is for people to come and say that food was awesome. The fact that the kids came up with some of the ideas, the fact that the kids were the ones cooking and marketing and working the business side of it is something we want the kids to understand,”Radke said.
There’s still more work to be done until the food truck is up-and-running later this year, but with class now in session, an authentic, real-life experience is now almost ready to be served.
