Registered dietitians are nutrition experts and Hy-Vee Dietitian, Jen Haugen, will show you what dietitians keep in their kitchens to help them be healthier (and it’s not cardboard and twigs!) |

Dietitians Do Eat Dessert!
Strawberry Rhubarb Crisp
All you need:
2 cups (1-inch pieces) frozen rhubarb
2 cups fresh quartered strawberries
2 tablespoons lemon juice
1 cup old-fashioned oats
1/2 cup whole wheat pastry flour
1/2 cup brown sugar
1/2 cup white sugar
1/4 cup margarine
1 teaspoon cinnamon
All you do:

Preheat oven to 350 degrees. In a large bowl, combine rhubarb, strawberries and lemon juice. Place fruit mixture in 8-inch baking dish.

In a separate bowl, combine oats, flour, sugars, margarine and cinnamon. Combine until crumbly.

Evenly distribute oatmeal mixture over fruit. Bake 25 minutes or until bubbly.
