(ABC 6 News) - The Kinney Creek Brewery has been open in Rochester for a little over a year, but its still something of a secret to some Rochester residents. Our Katie Eldred decided to take a look behind the bar in tonight's Made in the Midwest Report.
"Right now we're producing about 10 barrels, roughly, per week," says Kinney Creek Brewery Owner Donovan Seitz.
Donovan Seitz's love for craft beer started in his garage, but has not grown into The Kinney Creek Brewery.
"Did a little traveling and recognized there's other parts of the country that had a little bit better beer than we had here in Rochester," says Seitz.
Seitz started the brewery in December of 2012. Since then, he's been busy perfecting his brew.
"Something about brewing your own beer is, you always have an opportunity to change things. You don't have to have the traditional style. You don't have to have the traditional flavors. It's a lot like cooking where you can use different spices, use different ingredients to build that beer," he says.
Seitz and his crew brew the beer about every other day.
"I've been a fan of craft beer for quite a long time. It's nice to have a fresh clean beer that comes right out of your city".
The tap room is open for the flights of their most recent brew. You can get a flight of up to seven different types of their beer and on the placemat, it will tell you exactly what you're tasting.
"We pretty much keg every other day or every day depending on how busy. Just before Thanksgiving, we got into the local bars."
With the first of the year under his belt, Seitz has definitely come a long way from his garage.
"Where I'll be focusing in the next few months, is taking us into more bars and restaurants. Making sure our beer is more refined.
