Feed Your Child’s Mind with Breakfast

This school year, set your kids up for success in the classroom by feeding their minds with breakfast every day.  Eating a nutrient-rich breakfast – at home or at school – boosts brain power and fuels a child’s learning.   Hy-Vee Dietitian, Jen Haugen, will highlight how to build a nutrient-rich breakfast your kids will love.

  • Breakfast leads to better nutrition.  If breakfast is skipped, the nutrients missed are not made up during the rest of the day.
How to feed your child’s mind with breakfast
  • Keep healthy, convenient breakfast foods on hand
  • Stock a mom-approved bowl with grab-and-go breakfast foods
  • Break boredom by eating lunch or dinner for breakfast
  • Encourage school breakfast if you can’t make it at home
  • Make breakfast a priority for the whole family
  • Serve a yogurt smoothie or parfait
  • Boost nutrition in hot cereals by making them with milk
Ham & Egg Breakfast Quesadilla
Serves 4.

4 large eggs
3 tablespoons skim milk
¼ cup chopped green pepper
1 Roma tomato, diced
¼ cup spinach, roughly chopped
2-3 slices deli ham, chopped
4 whole wheat tortillas
¾ cup shredded mozzarella cheese
  1. Whisk eggs and milk in bowl.  Pour into skillet and scramble over medium heat until nearly cooked.
  2. Add green peppers, tomatoes, spinach and ham.  Let heat through and then remove to bowl.
  3. Add ¼ of the egg mixture to the side of each tortilla, sprinkle 3 tablespoons cheese over each.  Fold tortilla in half.  Place in heated skillet to melt cheese, then flip.  Tortilla should be golden brown and cheese should be melted.  Repeat with three other tortillas.
