Win Big with Grilled Pork at Your Next Tailgate

Park the truck and let the tailgate down. It is football season and time to cheer for your favorite team. Whether you are grilling on your backyard patio or at the stadium parking lot, tailgating brings big appetites. Grilled pork is an easy way to satisfy a crowd of hungry fans.

Make your very lean pork juicer and more flavorful. Jen will share how the new cooking guidelines from the U.S. Department of Agriculture help make pork a winner at your next tailgate.

Meat thermometer - a must-have for every tailgate.  The only way to make sure you are cooking foods to their proper temperatures is by using a meat thermometer. Jen will demonstrate how to get the most accurate result.

Keep it simple.
The Chili-Rubbed Pork Chop recipe below travels well and makes preparation a snap. Jen will show you this recipe along with an idea for a complementary side dish.


Chili-Rubbed Pork Chops
Serves 4.

All you need:
1 tablespoon chili powder
1-1/2 tablespoons packed light brown sugar
¾ teaspoon garlic powder
¾ teaspoon onion powder
½ teaspoon salt
4 bone-in rib pork chops, about 3/4-inch thick, trimmed

All you do:

  1. In a bowl, combine chili powder, brown sugar, garlic powder, onion powder and salt.  Rub on both sides of the pork chops.  
  2. Prepare a grill to medium-high heat; lightly oil the grate.  Grill pork until internal temperature reaches 145 degrees, approximately 4 to 5 minutes per side.  
  3. Serve with pineapple salsa and Peach Slaw (recipe below).  


Nutrition information per serving:  134 calories, 23 grams protein, 5 grams fat, 305 mg sodium, 57 mg cholesterol, saturated fat  1 gram, 3 grams carbohydrates, 0 grams fiber.


Peach Slaw
Serves 8.

All you need:
1 (6 oz) container non-fat peach Greek yogurt
¼ cup reduced-fat mayonnaise
3 medium peaches, peeled, pitted and diced
½ cup dried mango (or other dried fruit)
Half of a (16 oz) bag Hy-Vee coleslaw

All you do:
1.    In a large bowl, combine peach yogurt and mayonnaise.  Stir in peaches, dried fruit and coleslaw.  
2.    Cover and refrigerate until serving.

Nutrition Facts per Serving: 110 calories, 2 grams protein, 3 grams fat, 100 mg sodium, 15 mg cholesterol, 1 g saturated fat, 19 grams carbohydrates, 2 grams fiber.
