Apple Chicken Quesadilla
Serves 4 (1 quesadilla each)
Prep Time: 15 minutes
Cook Time: 20 minutes

All you need
4 (8-inch) Hy-Vee whole wheat flour tortillas
3/4 cup Hy-Vee shredded mozzarella, divided
2 cups chopped fully cooked Al-Fresco sweet apple chicken sausages, divided
1 Granny Smith apple, cored and thinly sliced, divided
Hy-Vee salsa, optional

All you do
1. Heat a large skillet over medium heat.
2. Place one tortilla in the pan and place one-fourth of the cheese, chicken and apple on the bottom half of the tortilla. Fold over the top, unfilled half of the tortilla.  
4. Add the next tortilla to the pan, add the toppings and fold.
5. Cook until the bottoms are golden, about 4 minutes, and then flip and cook for another 4 minutes.  
7. Repeat using the remaining ingredients for the remaining two quesadillas. Serve with salsa, if desired.

Nutrition facts per serving: 250 calories, 7g fat, 2.5g saturated fat, 45mg cholesterol, 560mg sodium, 26g carbohydrate, 2g fiber, 6g sugar, 23g protein.
